Hello Wakalix. A creator is necessary because there is no other way that the universe can possibly exist. Think about it, the universe is so vast and creation is so unbelievable that there HAS to be a creator somehow. As an atheist I didn't believe it either like you don't but, it's the truth.
What evidence is there that scripture can be taken as a science text book? You mean besides faith? Well for one the Bible has predicted things since before Christ came to the earth. Like I said, it proved the world was round before Christopher Columbus proved it. It also proved in Genesis 3:15 that both men and women possess the seed of life (Sperm and the Egg). This wasn't discovered by science until the 17th century. These are just some of the things the Bible has proven.

Why don't you try dipping into a science book instead of a bible? Serious suggestion: I'll bet you can find some in the children's section of a good bookshop who can explain cosmology etc in terms that a scientific layman can apprehend. I don't say this to be insulting; I can't expect that every unschooled person go off to get an advanced degree, and some subjects are quite complex...hence the "_____ for dummies" series.

No. Even if this grand, fascinating, complex, whimsical universe had a creator, even if we ignore the absurdity of the idea that any group of superstitious primitive mortals could have gained such profound insight into the fundaments of the Cosmos despite being profoundly otherwise on way more basic subjects, it was definitively - and this, I say this with absolute certainty - not the narrow-minded, egomanic, humourless control freak "God" of the Bible.

Also, the ancient Greeks knew the world was round, and proved it with mathematics. It's always been known that in humans, you require the male and female to produce offspring. It's like you're ignorant of things even a grade schooler would know...
There are explanations for why our universe exists. As to anything beyond that, or the greater structure beyond the universe (if there is one, which I recall still being debated), I'd say it's at least possible that something brought that into being. Doesn't diminish science or the understanding of the universe. Doesn't even dispute the big bang.

Flat earth, domed sky, a "firmament" above the sky through which the sun, moon, & stars traveled, and rain came from the "waters above the firmament" when God opened special floodgates. I even have a study bible at home which shows a similar illustration, so stop trying to pass the bible off as a scientific textbook.

Per definitionem , there cannot be anything beyond the universe because the universe is EVERYTHING - all that is, all that was, all that shall ever be.

There are some physicists that would use a different definition (which, as I understand, is a region of space-time where the same physical laws apply. Though I could be mistaken). Otherwise, some theories about the genesis of the universe don't quite work (See Brane theory). There is debate as to whether or not (using the above definition) there are other universes besides the one we inhabit.
Physics can be bizarre sometimes. Hell, some things reach the point where us laymen can't tell the guy with a doctorate explaining his theory from a stoned hobo talking about how the universe is made up of music (in other words, it reaches the point of "It's all Greek to me"). That is, until the math comes out.
Do you suppose his head would explode if we explained to him that the ancient Greeks (as well as anyone with at least half of brain in Columbus'time) knew the Earth was round?
Eratosthenes even calculated the circumference in the 3rd century BCE by measuring shadows in Egypt in different places at the same time. He came within either 10% or 15% of the actual circumference depending upon the length of the stade that he actually used.
