I've been to museums that had the stuffed remains of dodo birds. They also has the fossils of other animals like dinosaurs and prehistoric mammals like mammoths.
I never did see any fossilized or stuffed unicorns.
This is a classic case of accepting what the Bible says even though it is an obvious fabrication. This is why we laugh at creationists and call them idiots.

Skeletal/fossil remains of the Dodo bird, the Roc and other UNKNOWN creatures have been found. Many.

We didn't have stories about them from the ancient world, when they were first found some idiots tried to tie them to legends of gigantic birds (like the Thunderbird) but these things couldn't glide let alone fly.
