If the Sun were the center of the universe, then we would expect to see a difference in the speed of light through the ether depending on which side of the Sun the Earth was on. Since we see no difference in the speed of light at any time of year, we have to conclude that the Earth is at the center, not the Sun.

This puzzling fact was used by Einstein in his development of special relativity. SR is complex though, so Occam's Razor suggests that the better interpretation is that we are at the center. This does away with the need for SR.

Um, no, what?

Are you suggesting the Sun only radiates light in one direction, and to reach us it has to decelerate and reverse if we're on the other side of the Sun?

And even if your physics made any sense whatsoever, you'd be denying that the sun emits light, prefering instead to believe that the Earth does.

WTF?!

Now... onto the Occam's Razor part. 'Complexity', in terms of Occam's Razor, does not mean "too hard for me to understand". It means the explanation of the available evidence that uses more than the necessary number of entities.

(Okay, not exactly burning -- its ongoing nuclear fusion. But "burning" is good enough for these purposes.)

Um, assuming a constant medium. If the medium changes, chances are the speed of light will, too (e.g light is slower in water than in a vacuum).
